Irish potatoes are a traditional Philadelphia confection that, despite its name, is not from Ireland, and does not usually contain any potato. There's a vareity of recipes available.  It's just a sweet way to celebrate the day.  Because of the coconut included in this delight, it reminds me that Easter is coming soon. I found an easy recipe on allrecipes if you're interested in making them for your class or family.
